Captain Oats Salad Pasta Fusilli

CAPTAIN OATS SALAD PASTA FUSILLI

INGREDIENTS

250gm Captain Oats Instant Oatmeal
150gm Cabbage, finely sliced
150gm Tomatoes, finely sliced
100gm Carrot, finely sliced
80gm Onion, finely sliced
150gm Broccoli, finely sliced
200gm Pasta Fusili
50gm Parsley Leaf
200gm Mayonnaise
2 tea spoons of Lemon Juice
Salt & Sugar – Adjusted to taste

GARNISHING

60gm Salad Leaf
50gm Parsley Leaf
80gm Tomatoes
60gm Cucumber

METHOD

1. Cook pasta according to package directions. Rinse in cold water and drain.
2. In a large mixing bowl, whisk together the mayonnaise, lemon juice, salt and sugar until well blended.
3. Add Captain Oats Instant Oatmeal, pasta, parsley leaf, cabbage, tomatoes, carrot, onion and broccoli; fold gently until well mixed.
4. Served and enjoyed!
