Pumpkin Coconut Overnight Oats

Mix things up with your overnight oats and add pumpkin into it! Garnish it with walnuts, a dash of cinnamon and maple syrup.

INGREDIENTS

Quick Cook Oatmeal and Classic Rolled Oats

1/3 cup Captain Classic Rolled Oats (or Captain Quick Cook Oatmeal)

Coconut Milk

1/4 cup light coconut milk

Soy Milk

1 tablespoon soy milk

Pumpkin Puree

1/4 cup pumpkin puree

Pumpkin Pie Spice

1/8 teaspoon pumpkin pie spice

Salt

Tiny pinch of salt

Maple Syrup

1 Tbsp maple syrup

Walnut

Walnuts, handful, chopped

Cinnamon

Cinnamon, a dash or two

METHODS

  1. Mix first six ingredients (stopping before the maple syrup) into a bowl. Stir, wrap, and place bowl overnight in refrigerator.
  2. Remove in the morning. Add walnuts and a dash or two of cinnamon on top. Drizzle with maple syrup. Eat and enjoy.
